Discover the Authentic Flavor of Italian Risotto

Are you looking to try a 100% Italian dish? Risotto is one of the most representative specialties of Italian cuisine and a delicious alternative to pasta and pizza, typically served in Italian restaurants worldwide.

Today, we are introducing our risotto with forest mushrooms, one of the most complete dishes you’ll find on our menu, with the added touch of our own Mediterranean cuisine. A true Italian delight you shouldn’t miss!

What is Risotto?

Risotto is an Italian word that refers to rice. It’s a traditional Italian dish prepared with a base of rice broth, accompanied by other ingredients (meat, fish, mushrooms, vegetables…) combined in the broth.

There are many variations of risotto today, depending on the ingredients used, such as:

  • Risotto alla salsiccia (sausages)
  • Risotto agli spinaci (vegetables)
  • Risotto ai frutti di mare (seafood)
  • Risotto alla asparagi (asparagus)
  • Risotto ai funghi (mushrooms)

History of Italian Risotto

The origins of this dish date back to the Far East (14th century), where rice was typically cooked with leftovers or as a soup. Thanks to maritime trade routes, rice was imported to Europe through Venice and Sicily, where it became a novel product for the population.

Initially, rice was treated as medicine, primarily used to treat malaria and similar diseases. At the time, very few people knew its true nutritional value, and it was rarely consumed.

Later, in the 18th century, rice paddies began to be cultivated in Italy to reduce high import costs. Thanks to this measure, many farmers made a living and started cooking rice with surplus harvests.

During this time, chefs like Giovanni Vialardi experimented with ingredients like saffron to create a new, simple dish. However, it wasn’t until 1854 that the first recipes began to circulate.

With the advent of World War II, risotto became popular among Italian soldiers, who used it as a side dish. Later, the Italian region of Lombardy spread risotto throughout northern Italy.

Risotto ai Funghi

Although there are many versions of this Italian dish, today we will focus on the forest mushroom variant. Its main ingredients include:

  • Rice
  • Forest mushrooms
  • White wine
  • Bay leaf
  • Parmesan cheese
  • Butter

It is particularly enjoyed during autumn, the season when high-quality mushrooms, such as the prized "boletus," can be found in forests. This type of mushroom is frequently used to enhance the flavor of this delicious risotto recipe.

Traditionally, this dish was made with ingredients from the countryside and served in Italian restaurants in mountainous regions. A specialty that is easy to prepare, highly nutritious, and combines the typical flavors of Italian dishes.
