Italian cured meats have been a staple on our tables for centuries. In fact, their origins trace back to Ancient Rome, where Romans prepared cured meats like prosciutto, salami, and pancetta as a way to preserve them for long periods. Today, Italian cured meats are beloved worldwide for their unparalleled flavors and textures.

In this article, we introduce the new selection of Italian cured meats and cheeses available on the menu at our Italian restaurant, Rossini.

Coppa di Parma I.G.P.

Coppa di Parma is a type of Italian cured meat made from pork shoulder. It is seasoned with salt, pepper, and other spices, then aged for several months. The result is a delicacy with a delicate flavor that melts in your mouth. Commonly served as an appetizer or sandwich filler, it’s a popular treat worldwide.

It holds a Protected Designation of Origin, meaning it can only be produced in the Parma region under strict quality controls. The aging process, which lasts up to a year, is conducted in a carefully controlled environment to develop its distinctive flavor and texture.

Speck Alto Adige I.G.P.

Speck Alto Adige is a cured and smoked meat from South Tyrol in northern Italy. Made from pork leg, its production dates back over 700 years. Its unique flavor comes from seasoning with spices like garlic and juniper berries, combined with smoking over beechwood and subsequent aging.

It’s ideal as an appetizer in tasting boards or in sandwiches.

Mortadella Favola Pistacchio

Mortadella Favola Pistacchio is a classic Bologna-style mortadella enhanced with pistachios. Unlike other cured meats, mortadella is not aged. It is made with pork meat mixed with fat, salt, pepper, and pistachios, then encased, cooked, and smoked to achieve its signature flavor.

Salame Finocchiona Toscano is a salami made from pork in the beautiful Tuscany region. The name "Finocchiona" comes from the Italian word for fennel, "finocchio," as the salami is seasoned with fennel seeds, giving it a unique and special flavor.

This salami is aged for several weeks to enhance its flavor and texture, resulting in a rougher and firmer salami compared to others.

Parmigiano Reggiano 24m

Parmigiano Reggiano is one of the most popular Italian cheeses worldwide. It’s a hard cheese made from cow's milk, known for its intense and salty flavor. At Rossini, we serve Parmigiano aged for 24 months, providing it with an extraordinary depth of flavor.

Pecorino Toscano D.O.P.

Pecorino Toscano is an Italian cheese made from sheep’s milk. Its sweet flavor, reminiscent of nuts like walnuts, makes it ideal for pastas or cheese boards. It has a Protected Designation of Origin certification, ensuring quality throughout its production process.

It is aged for a minimum of four months.
