A food that arrived from another continent
The tomato comes from America and arrived in Europe after the exchanges initiated in the late 15th century. Its acceptance was not immediate. As with other American foods, for a time it was mainly cultivated as an ornamental plant, and its culinary use gradually spread.
The Italian adaptation
Over time, different Italian regions incorporated the tomato into their cuisines. The Mediterranean climate favored its cultivation, and the combination with olive oil, herbs, garlic, and other local products generated preparations that we now immediately associate with Italy.
The history of the tomato is also related to preservation techniques. Transforming it into sauce or concentrating it allowed for its flavor to be available outside of the harvest season. Thus, a seasonal product could become a much more stable culinary base.
